Avondale Restaurant Crawl–Participating Restaurant Parachute

Parachute was Eater Chicago’s 2014 “Restaurant of the Year” and a finalist for the 2015 James Beard “Best New Restaurant” award.

It is a small (40 seats) restaurant.

A husband-and-wife team opened it two years ago in Avondale to serve creative Korean-American food. Their affinity for Korean flavors and sensibilities as well as their own personal experiences influence the cooking.

“Our selections change nightly based on availability and the desire to showcase carefully sourced products at their peak.”

They looked for a long time before finding their location. “Everywhere we went, it was dead end after dead end after dead end. The location wasn’t good, or the location was good but too expensive, or people wanted too much money for their junk.“

They enjoy the diversity of the Avondale community. Because it is a burgeoning community that still has room for growth, an appreciative audience, and convenient location, it is a good place to do business.

By participating in the Avondale Restaurant Crawl, they hope to bring attention to the neighborhood as a vibrant food community to attract more business to the area.

For the Crawl, Parachute is planning on serving smoked carrots with jaggery and peanuts. It’s a “super-flavorful vegetable-focused bite” which will be a good example of what they do at Parachute.

I had to look up jaggery. It is a sugar consumed in Asia and Africa—a concentrated product of sugar cane juice or palm sap without separation of the molasses and crystals. Sources describe it as “tasty” and “delicious.”
